Week 2 of the Challenge


Ok everyone.  Week 2.  This might be the hardest week for some of you, but dig in.  Your body is becoming more efficient at processing protein and fat and becoming less dependent on the excessive carbs we've all been putting into our bodies.  Make sure you're eating enough vegetables and good fats.  Try and eat protein with every meal.  Fish oils, fish oils, fish oils.  Stay hydrated and get your rest.  You are on the verge of a major break through here, but you have to hang in.  If you've cheated, get back on the wagon.  Don't stress.  Here is another Firehouse meal for you to try:  Carne Asada stuffed Poblanos



Ingredients:  9 Poblano Peppers, 1.5 Pounds Carne Asada (Sprouts), 1 Zucchini, 1 Squash, 1 Onion,  1 bunch Cilantro, 5 cloves garlic, 1 small can tomato paste, 2 avocados, slasa, cumin, chili powder, red pepper flakes, cayenne, Cholula


1. Grill meat and set aside (High heat to sear both sides)

2. Saute veggies in olive oil and season to taste, then mix in with meat

3. Peel, de-seed and wash Poblanos, leaving them as in tact as possible

4. Stuff Peppers and put them in the oven for 10-15 minutes

5. Prepare easy Guac by mashing avocado and spooning in some salsa, garilc, and paprika to taste

6. Serve peppers with salad and guacamole on top
