We have a lot going on here at CrossFit Eaton these days! If you haven't noticed, we finally hung our ropes up. Try em out! Welcome home Becca, and congratulations on a job well done at the CrossFit Games! We are so proud of you! Welcome Desiree as our newest CrossFit L1 coach! You will start to see her coaching classes beginning in August. Please feel free to give her, as well as all CrossFit Eaton coaches your feedback. Coltin has been doing a great job shadowing our coaches during the month of July for a community service project at his school. We are so lucky to have him! Lastly, we will be sending an electronic survey out to all of our members via email so keep an eye out for that in the next couple weeks. Your participation and honesty will be greatly appreciated. This is your chance to let us know what you like, and what you'd like to see changed. This is YOUR gym and we want you to be happy! Whew...I told you we had a lot going on! Zucchini Pizza Boats
2 large zucchini, halved an scraped into a "boat"
pizza sauce (see my first post under "DON'T CALL ME LATE FOR DINNER" for recipe)
1 lb bulk spicy Italian sausage
various diced veggies for pizza toppings
shredded mozerella cheese
Par-cook zucchini halves in a 9x13 baking dish in the oven at 350 degrees. Brown sausage in a frying pan and add in vegetables about halfway through. Veggies must be chopped finely enough that they fit well into the zucchini boats. Continue cooking the mixture until the meat is done. Spoon the meat and veggie mixture into the zucchini boats and top with pizza sauce. Put back in the oven and bake until zucchinis are done. Top with cheese and brown. As always...you can skip the cheese if you're crazy. Enjoy!
